Butter Chicken

Can

Can replace chicken with tofu or paneer.

 

Servings: 4

 

Ingredients:

 

10-12 Roma tomatoes

1 head of garlic

3 small red onions

1 small bunch of coriander (or a tbsp of dried coriander)

Salt and pepper to taste

4 chicken breast (can use paneer or tofu)

1/2 cup of full cream or coconut milk

3 green chillies

Instructions

 

  1. Chop coriander. Leave to the side.

  2. Peel garlic and onion. 

  3. Chop chicken breast into bite-size chunks. 

  4. Blend all the onions and garlic until it becomes a puree

  5. Boil the tomatoes whole until you notice the skin peeling.

  6. Once the tomatoes are fully boiled through, drain the water and add cold water to the tomatoes. This will make it easier to peel the tomato skin.

  7. Peel the tomato skin.

  8. Puree the tomatoes.

  9. In a saucepan or wok, add the garlic and onion puree. 

  10. Add the chillies. Add them whole, so you can scoop them out later.

  11. Cook the onions and garlic for 2 to 3 mins until everything becomes more translucent. 

  12. Add the tomatoes to the onions and garlic

  13. Add salt and pepper to taste.

  14. Add chicken chunks

  15. Let simmer for 30mins or until the chicken is cooked. (Should be able to easily slice through a chicken chunk with a knife. This is a good indication that your chicken is cooked)

  16. Add the coriander. Add salt and pepper if needed.

 

This recipe is very versatile. You can substitute the chicken for paneer or tofu or heavy cream to coconut milk or cashew milk.
