Edamame Pasta Salad

Fresh Spring Salad

Makes: 6 portions

Ingredients: 

1 avocado

2 medium carrots

1 cup of frozen edamame (you can substitue for peas)

1 small bunch of green onions (scallions)

300g of macaroni pasta 

1 mango (apple works too!)

1/4 cup of roasted peanuts (any nuts work or can be done without!)

half a head of red cabbage

Vinaigrette:

1tsp of brown sugar (white works too)

2 tbsp of soy sauce

2 tbsp of toasted sesame oil

Instructions:

1) Boil Pasta

2) Dice and chop all vegetables

3) Defrost edamame under hot water

4) Combine all vinaigrette ingredients

5) Toss everything together and serve!
