There have been many times in my life that I’ve had to throw out fresh herbs because they have gone bad in the fridge. Finally, I have found a great solution to preserve herbs and quickly add them to any dish!
First, divide the chopped herbs (parsley is featured here) in an ice cube tray, then fill with water and freeze. Dissolve as needed in soups, stir frys and sauces. The water helps to preserve the herbs and keep them fresh for a longer period of time. To save some room in the freezer, you can also store the ice cubes in a baggie once frozen.
I have also done this with chopped spinach and added the cubes to my smoothies. This is an easy way to ensure you are getting those much needed nutrients and antioxidants!
